The wine:
For this white wine made from red grapes, only healthy Pinot Noir grapes were selected and harvested by hand shortly before they were fully ripe. Immediately after the harvest, a gentle whole-cluster pressing took place, as is also carried out in the champagne base winemaking, among other things. As a result, a clear, light-colored juice could be obtained without the red pigments separating from the berry skins.
After a temperature-controlled fermentation, the Blanc de Noir remained on the full lees for several months.

The Pinot Noir Blanc de Noir presents itself as finely fruity and elegant, with notes of strawberries and raspberries. An uncomplicated yet complex summer wine that impresses with its freshness and juiciness and is an ideal companion for summer evenings.
